To display all traffic that traverses my ltm by source address destination address and ports, is there a good way to collect this information?

CirrusAVR if enabled may be able to provide that information. You can also try syslog or snmp. I am not sure which one will provide all the relevant information that you are seeking. Just be aware that depending on the traffic volume, you can tax resources on your F5.
