I have an audit coming up soon and I was wondering what is the best way to get information about all the VIPs using a script. Was looking to pull info re VIP name, Dest IP, Service Port, Pool name and Pool members, Security Policy attached. Is there a quick and easy way to do this ?

You can use following commands:
tmsh list ltm virtual
tmsh list ltm pool
tmsh list ltm profile
tmsh list ltm policy
