Upgrading MicroSoft Exchange OWA/Activesync with an APM front-end

I'm not an Exchange person so I may have some of this wrong. It seems when you are upgrading OWA, you point everyone to the new Exchange and if the mailbox isn't there yet it redirects to the old Exchange. Is this kind of upgrade possible when you are using the Exchange iApp?
