On AFM, not seeing the option of 'DoS Protection' when trying to create a custom DoS Protection Logging profile

Logging settings for AFM's DoS Protection features are not configured through Logging Profiles. Instead, look for the Log Publisher setting at the top of Security >> Dos Protection >> Device Configuration.

There was some confusion in the documentation I had, but further research indicates that you are correct.
