I'm looking how to delete a persistence entry but it is located in a partition. I can see the entry when in the correct partition on the GUI but not when I run tmsh show ltm persistence persist-recor...

After you run tmsh, you should change directory for partition.
cd /partition_name
Then you can delete any records using the following command. Just keep in mind you may need route domain id when you try to delete certain records.
delete ltm persistence persist-records
