You can try that way:
Go to
Local Traffic ›› Pools : Pool List ›› "pool_with_server_to_be_stopped">>
tab "Members" >> choose member/server that will go to maintenance.
Next you can set the state you want.

Just for clarification,
You can set the state to be:
-
Enabled (All traffic allowed)
-
Disabled (Only persistent or active connections allowed)
-
Forced Offline (Only active connections allowed)
After that press "Update" of course...
