I have an ssl Profile that is currently linked to a Virtual Server in our production environment. Under the advanced configuration>Ciphers I see "DEFAULT:!TLSv1".
Does this mean that it's using ...

The "!" in front of "TLSv1" is saying that the Virtual Server that the client SSL profile is attached to will not use TLSv1.
The "DEFAULT" ciphers include many variations of TLS1.2, you can view the DEFAULT cipher list with the following command in CLI: "tmm --clientciphers DEFAULT"
