Logging source IP
If I need to keep a daily log of source IP addresses hitting a virtual server, is a remote logging profile or an iRule my only options?

A request logging profile applied to the VIP, or an iRule, is indeed an excellent way to log source IP addresses. In either case you'll definitely want to also use HSL (high speed logging) to your syslog servers.
