Did you try putting the headers in single ' 

  
  when HTTP_REQUEST {   
  set LogString "Client [HTTP::header 'SM_USER']:[HTTP::header 'SM_SERVERSESSIONID']:[HTTP::header 'X-Forwarded-For'] -> [HTTP::host][HTTP::uri]"   
  log local3. "$LogString (request)"   
  }
