NimbostratusHTTPS to HTTP redirect
So now the task at hand is to set up SSL offloading I have the cert & profile all set up, but now I need to redirect the incoming HTTPS request to HTTP with a new URI. Any ideas ?

So your setup now is similar to the following?:
Client -> HTTPS VS (SSL offload) -> HTTP Pool
Can you post an example of the URI you wish to modify/redirect to?

Looks like you just need the pool members to be configured on port 9704 and port translation will occur automatically. In this case you just need a client ssl profile on the virtual server.
Is that what you're after?
