Ive looked at the RDP object settings and the policy itself in APM and cant find a way to stop file transfers via copy and paste from the remote server tot he local PC. I understand this ...

In the RDP configuration you need to add the following in the "Custom Parameters" field.
disableclipboardredirection:i:1
