Im using a universial persistance profile with an irule attached.
However when I look at the persistance records I see that the client addr is not populated.

Employeeis client ip changed after persistence record is created? i suggest you open a support case if you want to know whether it is bug or expected behavior.
anyway, you know since persistence is not based on client ip, this won't cause an issue.
