SSL persistance along with SSL offloading

Once you offload at F5 then from server side F5 will be able to read the headers. So I think there is no real need for you to use SSL Persistence.

SSL persistence profiles only work with non-terminated SSL sessions. However, for your offloaded VIPs you can use and iRule that persists bases on the SSL session.
