You don't need an iRule for this task. Simply create a new SMTP Pool for the external SMTP-Server and then change your Virtual Server configuration to use this newly created pool.

 

Alternatively, you could also add the external SMTP-Server to the existing pool and deactivate the existing pool members. The outcome would be the same...

 

Note: Depending on the network integration of your LTM. It may be additionaly required to enable Source-NAT for the external SMTP-Server to not end up in a asymetric communication.
