LTM policy, changes not immediate

I've been playing around with some simple LTM policies (v11.6 HF4) and performed some change in the policy (such as logging) and observe that they are not reflected immediately (old logic still apply...

Must likely, I think what you're experiencing is that existing connections will not get the changes until a new connection is established. That's what I've noticed with irules.
