Does anyone have any examples or is it even possible to log all data that traverses a VIP. The data I am trying to get is source data from the host, packet information. I understand this won't work within SSL but is it possible to get details for troubleshooting such as page requests, time stamps, with an HTTP Request from the end user?

You want all DATA or just a record of the packets that traverse? The latter you can do with a request log profile. Create the profile via:
Local Traffic -> Profile -> Other -> Request Logging
... then assign to the VIP.

Example template-
CONNECTION :: $CLIENT_IP/$CLIENT_PORT -> $VIRTUAL_IP/$VIRTUAL_PORT -> $SERVER_IP/$SERVER_PORT :: $HTTP_REQUEST
