Give this a shot:

when CLIENTSSL_HANDSHAKE {
    SSL::collect
}
when CLIENTSSL_DATA {
    binary scan [SSL::payload] H15 hex
    log local0. $hex
    SSL::release
}

Same idea, but after SSL decryption.
