i am fairly new to F5 and trying to setup a health monitor for a node with POP3 and IMAP services.

MVPI suggest you set Debug to Yes in the monitor, and then check the created log file in /var/log/IMAP__XXXXXXXXXX (I'm not sure of the name but It will include the IP+port of the members)
