Cookie persistence is Web layer, Source IP affinity is Layer TCP layer.
If you want to have stickiness based on sessions, you go with cookie.
If you want to have stickiness based on client machine IP, you go with affinity.
The pro's & con's can be read more on the articles.

Cookie persistence is L7. IP persistence is L3. Typically, if customers are behind a proxy/nat device, it is better to use cookie persistence in order to distinguish individual sessions.
If you are not really sure, use cookie persistence. It will cover most common use cases. If you are using cookie persistence, enable OneConnect with /32 netmask.
