BIG IP DNS MX Records
Hello and thank you for taking the time to read this, and all advice appreciated.
On our BIG-IP DNS we host the domain xyx.com, however we would like to have a MX record that points to our email pre filter service.
So for example pre filter domain name is prefilter.service.com that has numerous IP address, we would like to host an MX record that points to our email pre filter service, is the simplest way of doing this simply creating an A record to the pre filter IP address, and what happens if they introduce new IP addresses? or change their IP address?
My question is, is their a better way of doing this?

The MX record points to an FQDN, not an IP address - the A record (IP address) will be resolved from the DNS servers that handle (in your example) service.com
All you need on the BigIP DNS (GTM) is to create the MX entries in zonerunner.

DNS -> Zones -> Zonerunner -> Resource Record List -> Create Zone = testing.com TTL = 1800 Type = MX Preference = 10 Mail Server = orders-testing.com
